The Stormlight Archive
As with all Cosmere works, although you could absolutely enjoy this series without any previous exposure to the greater universe, I generally wouldn't recommend this group of novels for fantasy newcomers because of the sheer size of the published work. With four released out of the seven planned books from the current sequence, as well as two novellas, The Stormlight Archive is the most expansive of Cosmere works. To illustrate this, I've provided their page and word counts in a table below.

In addition to their length, I do have to give a content warning to those suffering from mental illness. While very much a fantasy series, these novels do deal with mental illness from a first-person perspective, and while not always labeled as such, the connections can be made.
